The butchery business established in 1991 by Rob Rattray is run by Rob and his wife Sheila and 6 full time butchers/trainee butchers and trades from retail shop premises in Chalybeate Street, Aberystwyth. By 2002 the business had outgrown the shop premises and subsequently expanded by developing a Meat Processing Unit at Ffos-y-fuwch, New Cross, on the family farm.
The Shop prides itself in offering quality locally sourced meat to the retail and catering trade in Ceredigion.
- Locally sourced Beef mainly from farms within Ceredigion with some Christmas Beef purchased at the Royal Welsh Winter Fair and other Christmas Fatstock Shows. Beef is hung at the Processing Unit for some 21 days to mature before being boned and prepared to meet the customer’s requirements.
- “Ystwyth Valley” Lamb either produced by Rob and Sheila on their own farm at New Cross, or from other local farms in the Ystwyth Valley. True Taste Gold Award for his Ystwyth Valley Rack of Lamb and Lamb Parcel.
- Locally sourced Ceredigion Pork produced to Rob’s specification, mainly from Penlan Farm, Talsarn and other local pig producers.
- Range of Local, Welsh and British Poultry. Local free range Turkeys, Geese, Ducks and Chicken at Christmas. Game in season.
- Our very own Home Cured Bacon and Treacle Cured Bacon - cured by Rob at the Unit . Rob’s Treacle Bacon was also Highly Commended in the True Taste Awards and HCC South Wales Regional Home Cured Bacon Champion.
- Range of home-made award winning sausages, burgers and barbeque products, including Great Taste Gold Award winning Lamb, Mint & Honey Sausage.
- Full range of cooked meats and pies.

Much of the catering side of the business is operated from the Processing Unit, where meat is prepared, and orders despatched to both the private and public sector. The business supplies a large number of hotels, restaurant, pubs and cafes in the area. Public Sector customers include a large sector of Ceredigion County Council’s Schools and Homes, the Local Health Authority, the National Library of Wales and Aberystwyth Art Centre.

Rob & Sheila run a flock of Pedigree Beltex, Beltex x Texel and Commercial ewes on their farm at Ffos-y-fuwch, New Cross, Aberystwyth. Primarily the commercial farming enterprise is run to provide quality lamb for the business throughout the year. It is run in such a way that they are able to ensure that their own lamb is available for the shop, late in the season - at times when quality lamb is difficult to buy from other sources.
A flock of pure-bred Beltex sheep and Texel-cross-Beltex sheep are run alongside the commercial flock, which are kept for ram production, and produce what Rob considers to be the ultimate ram for using on a commercial flock. These in Rob’s opinion produce the “ideal butcher’s carcase”. Rams are usually sold directly from the farm during August and September.
Rob, Sheila and the family are keen supporters of the Royal Welsh Agricultural Society Shows and other local Shows. Rob is extremely honoured to have been invited to judge the Steer, Heifer and Pig classes at the Winter Fair on various occasions. He has purchased the Champion Heifer at the Winter Fair on two separate occasions and is a regular buyer at the Winter Fair sales. In this way he is proud to be able to offer his customers, what he considers, to be some of the best beef, lamb and pork in Wales for the Christmas season.
